Breakfast at The Yale Manor at Copper Beeches

Our farm to table organic breakfast menus (vegan, paleo, gluten-free, and health-specific options like organic green juices), provide not only stress-reduction but a nurturing diet that leaves our guests feeling better when they leave than when they arrived. This attention to organic, healthful food meets the increasing market for health concious travelers that want to avoid breakfast foods high in sugar, refined fats, and flour. 

Sample Menu:

Juevos Rancheros with cage-free eggs, pepper bacon, organic black beans on a tortilla with cheese melted in the oven, topped with sunnyside eggs/bacon and fresh organic cilantro to finish off the plate. A side tray of various local salsas, organic sour cream, and fresh avocado slices top off this hearty meal - a staff favorite!

Old fashioned blueberry pancakes made from scratch with Mennonite flour, Amish butter in the batter and on the griddle, NYS maple syrup and a side of Mennonite link sausage from Sauders in Seneca Falls.

Individual souffles that can be made to order for any palette for those who need to avoid meat or cheeses. Typically made with cage-free eggs, four cheeses (cream cheese, parmesan, romano, and muenster, Mennonite ground breakfast sausage and season vegetables from local farms.

Typically a side bar of organic granola/yogurt/berries is offered along with sweet breads.

Note that breakfast is served to Manor House guests only. Yurts are supplied with full kitchenettes and a starter basket of breakfast items including microwave poacher for eggs, cheese, coffee pods for the keurig, creamer, granola, yogurt, bagels/cream cheese, butter, and seasonal organic fruit/berries.
