We’re Raving about Ravines Wine Cellars

At Ravines Wine Cellars, wine is more of a lifestyle than a delicious beverage to be enjoyed every now and then. It’s decades of knowledge and a heritage that spans generations and crosses oceans. To Morten Hallgren, who was raised in the Provence region of the South of France, wine-making was part of daily life. With viticultural skills honed at the 270-acre estate known as Domaine de Castel Roubine, Morten has created a small, distinctive winery with his wife Lisa using Old World traditions in tandem with the unique climate of the Finger Lakes.

The winery is situated between two deep ravines, thus its namesake. The ravines drain cold air from the land during the winter and the plot of land, situated at the widest part of Keuka Lake, allows the grapevines to receive the maximum benefit from the lake’s temperature-moderating effects. The science of it all has decorated Ravines Wine Cellars with accolades such as Best Dry Riesling in the 2003 Riesling World Cup just two months after opening in 2003.

This October, visit the Seneca Lake Tasting Room’s historic slate barn at White Springs Farms for the Ravinous Table dining experiences. Guests gather at the slate barn to enjoy hand-riddled sparkling wine before joining the wine steward on a brief tour of the wine cellar. Sample red wine from the cask in the barrel room, paired with the perfect appetizer prepared by the barn’s chef, then return to the farm table for three pairings of dishes served with Ravines wine. Learn the delicious details of the wines, vintages, farmers, and food.  The evening Ravinous Table October dates are October 6th, 13th, 20th, and 27th at 6PM.

Also offered is the Ravinous Tasting Table midday meal experience. Similar to the evening experience, the Ravinous Tasting Table experience consists of two flights of wine and food pairings at the farm table. The first course is Riesling Expression served with a duo of Dry Rieslings. The second flight is three wines paired with three delicious dishes. Dates for the midday Ravinous Tasting Table are October 6th, 7th, 13th, 14th, 27th, and 28th at 11:30AM.
